I know you are looking for a specific term, but, in my opinion, the best option is to leave the original in Spanish, because it is a peculiarly Spanish medieval institution. Insert an explanation in round brackets, such as "exchanges" or "commodities exchanges" or "seafood exchanges".

waterfront fish markets

Lonjas de Mar was the old-old Spanish name for waterfront fish markets (or exchanges) ..... and the agents who bought fish there and took it inland were called "exportadores" (ex-portadores" -- carriers or porters FROM the Lonja inland, get it?). So,in Spain an exportador was really what we know today as an importer. Guess what exporters were known as? "Sacadores" ("taker-outers"). Export wine (traditional sweet and strong Sherry or Amontillado) was called "Vino de Saque" -- take-out wine, pronounced "veeno de sake". Origin of the name of a famous Japanes liqueur. Ah ha!!!!
