Tourner les artichauts, les mettre dans le jus de légumes (cuire les légumes 50 mn en les mouillant avec 1.5 l d'eau).

I may be missing something obvious here, but I'm not at all sure what is meant by tourner. No further information is given in relation to the artichokes.

toss the artichokes

Tossing artichokes in/with something helps the artichoke to absorb the flavour of for example lemon juice - see example below

It's 'tourner' as in to machine with a lathe, so the English would be to bore, to hollow out or, perhaps better in this case, to remove the centres.
