I don't know the exact word of Schaukoch in English, but I am pretty sure that these Schauköchen are cooks who prepare food in front of the people for demonstration. I know that it's about Messe, but there are cooks who prepare food in front of people at parties, for example, like cutting roast beef, or preparing other dishes.
