From a description of the powder store at Brest castle:
"Elle est voûtée de pierre et épaulée de chaque côté par 3 contreforts encadrant des ventilations en chicane."
I imagine these a being slits in a zig-zag pattern but I can't think that will work as a translation!
I found this on a page about powder stores designed by Vauban:

which gives "baffle plate" for "plaque en chicane." It's a real pain not having a photo or drawing (impossible to make anything out from the photos on the link I gave in the question).
