- i think this is in reference to cell phones [or mobile phones] of the flip of folded model, i.e the screen part folds onto the buttons part when not in use.

- i've seen cellphone ads over here refering to them as flip phones.

- so to 'flip the phone open' = to unfold the (cell) phone.
