El análisis de varianza (ANOVA) para un nivel de confianza del 85% nos indica que el XXXX'03 es diferente a la media de los 6 vinos de la competencia debido a una tonalidad de color menor (tonos azules), notas más intensas a frutas del bosque y florales y menos intensas a tostados/ahumados, vainilla/coco y ***rancio/evolución***. En boca, presenta una intensidad retronasal y astringencia mayor con menor acidez.

Getting all technical here about wine (instead of just drinking it). Anyway, any ideas about rancio/evolución. Is it sour? gone off?

I'm changing my mind a bit I now think it refers to the "madurez" of the wines, whether they taste woody. Maybe?

James is right about "rancio" being used in English, BUT be careful. Look at this evaluation:

In your text, it's probably rancio, as James suggested. (I'd use "aged" for the evolución), as the rest of the attributes appear to be positive. Here's one def. on "rancio":

rancio/developed

As for 'evolución' I suppose it means 'evolucionado' or 'well- developed'. Here's another reference:
