I hold as valid and approved

What comes before this is surely the authority that the principal grants to the attorney. This paragraph should follow from that and, in my view, should say:

I hold as valid and approved, according to law, the actions of the attorney hereby appointed, in the interest of the principal and of the said undertaking / business (the context will tell you what is the best word for "impresa")

You may have to use the passive voice to say The actions of the attorney.... are held as valid and approved

It depends on how the entire document has been drafted. Most Powers of Attorney I have seen in English are in the first person (I...) whereas in Civil Law countries they tend to be drafted by a notary and refer to the Principal in the third person.
