Yes Barbara, there are but somehow, and this is just a personal opinion, 'mock' sounds a little better to me. Other examples would be 'mocktails' (alcohol-free cocktails) and mock elvers (which in Spanish are called 'gulas')

I though about ¨flourless whisked sponge¨but if you look at the recipe, it has THREE glasses of sparkling wine. It is basically a baked foam made with whisked eggs, sugar and wine. No equivalente in English as far as I know.

I think you're on the right track, Isamar. I saw a lot of references to "fake sponge cake", for which few actual baking ingredients are used.

How about 'mock sponge' or something along those lines? It's more or less as vague as the Spanish name. In a couple of recipes I found, I saw that flour wasn't included (although cornstarch was), so perhaps 'flourless sponge'?

I thought of ¨baked sabayon¨but it is not quite that either so I believe it is better to describe it.

Not really because there is quite a lot of wine and it has egg yolks too... it is quite unique really (and quite sugary if you read the ingredients!).

No hay equivalente en inglés para este "falso bizcocho", que es una preparación de huevo, azucar y vino espumante (ver fuentes debajo), por lo que te sugiero una descripción del mismo, que podría ser:

TORTILLA ROMANA


Este postre es típico de Muros (A Coruña) yo lo conocí un día viendo TVGA, le preguntaban a la gente de la calle si sabían lo que era una tortilla romana, yo me imaginaba que podía ser cualquier cosa menos un postre, cuando explicaron cómo se hacía la retuve en mi memoria para hacerla algún día en casa. El postre consiste, tal y como su propio nombre indica, en una tortilla hecha al horno, rellena de crema pastelera y cubierta de caramelo. La verdad es que está deliciosa. Aquí dejo la receta por si alguien quiere probarla, es realmente deliciosa.

Ingredientes:

Para la tortilla:

- 3 vasos de cava
- 3 vasos de azúcar más 7 cucharadas
- 7 claras de huevo
- 3 yemas
- 1 cucharada de maicena

Montamos las claras a punto de nieve y reservamos.

Mezclamos el azúcar con el espumoso. Añadimos las yemas de huevo y la maicena, revolvemos todo bien.

Añadimos las claras y mezclamos.

Vertimos en un molde untado en mantequilla para que no se pegue la masa e introducimos en el horno que ya está caliente a 180º durante 20 minutos. Cuando veamos que la tortilla está cuajada, retiramos del horno y dejamos enfriar.

Muros-recipe (sherry-dipped, caramel & toffee-streaked) chiffon cake

I like Cecilia's sabayon idea, so won't copy it.

Funnily enough, there once used to be a Cocina gallega at El Terreno in Palma de Majorca offering this 'biscuit' or 'cookie'.

Howls of protest, but rustle up something better!

Galician flan cake

At this point, IMO, an appetizing description trumps culinary education.
A estas alturas, creo que una descripción apetitosa supera la educación culinaria.

Flan is an egg pudding cake, the specialty is Galician, filled with cream and covered with sherry, caramel and toffee.

Without giving a lesson on what "falso bizcocho", you can accent the local recipe and the rich ingredients and flavours.
