This is one term I frequently come across with this sense used in FR docs; when 'overridden' has the sense of 'forcing' something to do something different from what it would eitherwise have done.
However, in the specific sentence you have, this would require some re-working to fit it in properly, since you can only really 'forcer' some specific operation etc., and you case here is slightly skewed from that.
'outrepasser' might be a better term to fit in, or even 'contourner', if the sense her is 'bypassing' the automatic control to control it manually.
