perhaps you could also say: mashed sea-urchins.
As to the Belon oysters, they are also called "common oysters" but that is not good advertising in a menu card. The best probably would be to call them "Belon oysters". Bon appetit!

belon oysters au gratin with chicons, periwinkels, sea urchin puree

Belon oysters generates numerous google hits, au gratin is well understood by English speakers, chicons are Belgian endive sprouts grown in darkness so that they are white and less bitter (we did research on them at Virginia Tech as an alternative crop for Virginia growers), periwinkles (see reference) are the English name, with this spelling, for bigorneax, and puree is also understood in English by most gourmets.
