"pasto de mil transformaciones" is an adjectival phrase applied to "catedral". "Pasto de" means "the object of". It's common in the expression "pasto de las llamas", consumed by the flames, but also used with other nouns, such as "ser pasto de la murmuración", to be the subject of gossip. So it's saying that the cathedral has been "pasto de mil transformaciones": it has undergone numerous transformations or changes. It's a slightly odd usage of pasto, but that's what it must mean.
Here's a somewhat similar usage:
"Hilde viajaría al pasado en busca de Cleopatra y los átomos que la componen, ya será pasto de cambios en el futuro."
