Roofing in the Oxford Dictionary defines it as materials for or the process of building a roof. Can you make the distinction in your text between the roof which is the finished structure and the fooring, i.e. the materials and work process of building it? Sometimes one word can have two different meanings just as long as the context makes clear which one is intended.

Sorry. Did not see this further question till now. Without context I could not say if pitched roofing would be effective. I would expect that in that building, all the roof is pitched if part of it is. Therefore *pitched" does not do much to distinguish it. I still think you can use *roofing" for the tower.

My problem is that I have used copertura for roofing already or roof but cannoty use the sam e term again

It's about works for roof covering. "Falda" is a part of a roof sloping in a given direction and at a given pitch. Since "torrino" means "small tower", this simply means the roof above the small tower.
The building is made up by several bodies, and each is covered by two or more roof parts, "falde".
Note from asker:
not totally convinced as it refers to copertura in other areas as being roof. This is too vague here and I think it has more to do with eaves or the pitch of the roof, not just the roof...but thanks for this Michele
