'Scadenza' is not a term anybody would use when referring to wine. There is no 'sell-by date' label on wine, and the term you are looking for is the exact opposite of maturity here (if by it you mean 'the state of being mature', since it cannot possibly mean 'scadenza' in the sense you would use for an insurance policy...). In your text it refers to a wine that is no longer drinkable, having lost all of its qualities (please refer to the Treccani entry provided last 7 March).

decline? deterioration? degradation? This Italian expression is hardly ever heard (I had never found it before your post) esp. combined with wine. Decadenza means 'progressiva diminuzione di prosperità, floridezza, forza, autorità e sim.' (Treccani online), so I suppose this refers to a wine that has lost all its characteristics. I don't know if decline, deterioration, degradation or similar could do for a wine that is past its peak ageing stage.

Had just made the glossary entry when I read Barbara's discussion entry. And I have to say of course he is right. I don't think it can mean maturity, so if you know how to erase the glossary entry, could you please do it for me? Sorry for the confusion, Charles.
