Another term for this in German is "Drempel". (Er entsteht durch Anheben des Dachfusses um 0,80 bis 1,50 m über die Geschossdecke beim Kehlbalken- oder Pfettendach).

I believe the "Kniestock" is probably an abbreviated version of this term. So jamb or jamb wall will probably be fine.
