French to English Other Cooking / Culinary recipe ingredient
Filet de dorade, jus de bouille is the item on the menu. I can't find a translation unless it is another word for stock/gravy. Thanks for any clarification.

Il y a beaucoup d'étoiles en Belgique.
J'imagine que si la traduction du menu a été demandée en anglais, c'est qu'il ne s'agit pas d'une gargote.
Un Chef imaginatif qui s'appelle Bouille ?
Ou le nom du restaurant comprend le mot Bouille ?
Il n'y aurait pas d'erreur de typo dans ce cas : leur spécialité.
La seule occurence pour la Belgique :

Si cela correspond, alors jus Bouille.

Si ce n'est pas le cas, je penche vraiment pour une typo de rouille.

Bouille, sans être de l'argot, est un mot familier pour désigner le visage.

Typo ? for "rouille" ?
La rouille n'est pas vraiment un jus et s'ajoute à la soupe de poissons.
Sur les croûtons ou pas.
Cela peut vouloir dire que le filet de daurade est simplement accompagné de rouille.
Ou que le cuisinier a fait un jus à base de rouille.
Comme dans le domaine de la mode, l'imagination n'a pas de limites.
Au propre comme au figuré.

cooking liquor

It doesn't sound too appetising in English, but I suspect the same can be said of the source term.

However, it seems to me to be the only safe option.

"Broth" is perhaps a better choice than liquor, particularly for a British English readership
