It's a menu so unfortunately there is no further info, no description of the dish etc. All I have are the recipe names!

slow food If the context is suitable these could be defined as slow cooked, as in "stracotto" which is sort of what braised is in any case.

Yes, it does seem like meat cooked so that it's very tender.

No, actually fork tender is a description, often used for describing the tenderness of braised meat dishes in recipes, just as, "melt in your mouth", "fondente" might be used. Often said of the tenderness of a steak, "so tender you can cut it with a fork".

E qui hai scalogno "fondente" cotto con acqua, zucchero, vino bianco e aceto. Quindi molto vicino a quanto avevo suggerito, forse ci vorrebbe un'aggiunta di "caramelized juice" o simili.

I can't be sure of what it means. My guess would be that it is "roasted", given the context, but it is highly a guess.
