I've never come across the term "hay hotel" to mean rural accommodation in a general sense, but I did come across this article which suggests that it can mean accommodation where everything is hay-based - a real return to nature!

These appear to be on the continent - in rural Germany and Austria; if that fits with your text, then this may well be what's meant. As to how you'd translate it into french - auberge à foin?! I'll leave that to the French native speakers.....

Du fait que ce soit un genre d'hôtel sans doute relativement rare en France, je ne crois pas qu'il y ait un terme spécifique. Il semblerait qu'il faille passer par une petite explication.
Les chambres d'hôtes et gîtes ruraux sont loin de tous proposer ce genre d'exotisme, et ont le plus souvent tout le "confort" (quoique dormir dans le foin doit être assez sympa) que l'on espère.

J'avais tout d'abord pensé à "ferme auberge", mais ce terme est classé dans la catégorie gastronomie, alors que "gîte rural" apparaît dans la catégorie hébergement.

ps: J'ai déjà dormi dans le foin en gite rural...même s'il y avait aussi des chambres a disposition. Je pense en effet qu'en France ça reste au niveau d'option, sans doute par manque de clientèle. Je préviens tout de suite les amateurs, c'est sympa, ça sent bon, mais ça gratte!
