More context? Is this on a webpage, in a book, at the beginning or end of a recipe, who gives the mark, etc. It could indicate level of difficulty rather than how good the recipe is...

Similar to others, but I feel that "overall" is a much better word here than "average"

My Google search came up with 83 million hits for this, compared with only 56 million for "average rating" - doesn't necessarily prove anything, but it backs up my answer.

Average appraisal after you have tasted it.
Could it be "level of difficult"? Niveau de difficulté? Est-ce difficile à faire?
Could it be "cost of ingredients"?
Could it be "the lenght of time necessary to prepare"?
More context would bring more opinions ... Hasta luego ...

disagree Tony M : Nope! I can see no justification for 'minor' — especially as 8/10 is actually quite a high mark; and I hardly feel that 'remark' would have a place alongside an actual rating/score like this

I think that this is the average rating of the recipe (how it tastes)

They surveyed people who have tried this recipe out. This was the average rating (8/10).

I don't think it has anything to do with "difficulty" of recipe itself.

If indeed this is some kind of viewer / reader rating system, then this would be an alternative to Matt's answer, perhaps slightly less formal in tone, so suitable for a website, etc.

However, as Melissa has pointed out, without context, it's hard to be sure — it might equally well be a 'difficulty level', for example.
