I think "enjoy" is perhaps too strong to use for working on texts that don't interest me in the slightest. When I'm working on an uninteresting text, I'm doing my job; I'm content because I'm being paid for it; I'd rather be doing that than anything else as a job; but I probably wouldn't say I was actually getting enjoyment from it.
But when it's interesting, I can stop looking at the clock every few minutes, stop counting words done vs words left, and just enjoy immersing myself in... If it's too challenging then it could become a little stressful and rather less well-paid (but should I have accepted the job anyway??); if it's very easy it could become boring if it's also repetitive, but any new text is normally more straightforward than too easy; if it's well paid then that's definitely a plus but it isn't the most important factor, if you refuse badly-paid jobs as I do.
Give me an interesting topic every time and I'll enjoy myself. Interesting is usually good, unless there's a time crunch or my personal life interrupts.
Well-written is usually good for the same reasons.
There are times when challenging texts are fun, and times when I really, really like an easy text.

Like Cecilia, I lose track of time when the topic pulls me in. Fortunately, I've had a lot of those recently.
Well-written source text helps, but even then I can get bored if the topic doesn't interest me. I start checking how many words I've done to see how soon I'll reach my daily quota.
