"El aire es el perfume de un plato o de un cóctel. Se trata de texturas muy ligeras que se obtienen aplicando el batidor eléctrico en la superficie de un líquido al que se ha añadido un producto emulsionante.

Accionar el batidor eléctrico sobre la superficie del líquido, hasta que se forme una espuma de textura jabonosa.

Una vez se haya formado dejar reposar un minuto. Recoger delicadamente el aire con una cuchara."

A che diavolo possono servire le schiume in cucina? Alcune schiume già vengono utilizzate da secoli. Quando montiamo gli albumi ad esempio stiamo formando una schiuma. Anche la panna montata è una schiuma. A volte le “arie” possono servire, oltre che per decorare un piatto, anche per dare una piccola nota aromatica senza essere invasiva.
