El origen del actual trigo cultivado se encuentra en la región asiática comprendida entre los ríos Tigris y Eufrates, habiendo numerosas gramíneas silvestres comprendidas en este área y están emparentadas con el trigo. Desde Oriente Medio el cultivo del trigo se difundió en todas las direcciones. Las primeras formas de trigo recolectadas por el hombre hace más de doce mil años eran del tipo Triticum monococcum y T. dicocccum, caracterizadas fundamentalmente por tener espigas frágiles que se disgregan al madurar. 2. BOTÁNICA. El trigo pertenece a la familia de las gramíneas (Poaceae), siendo las variedades más cultivadas Triticum durum y T. compactum. El trigo harinero hexaploide llamado T. aestivum es el cereal panificable más cultivado en el mundo. |
