This is a profession or trade that appears in the first ARgentine censuses in the late 19th century:
En los censos nacionales de 1869 y 1895, asociados a la familia Colombres que figuran como “hacendados”, aparecen varios de los apellidos actuales de la Comunidad Indígena Chuschagasta (Balderrama, Cata, Mamani) con oficios de la “clase” de servicio, o dependiente: jornaleros, sirvientes, criados, peones y peonas, hilanderas, queseras, tejedoras, cocineras, labradores, pelloneras, etc.
Saddle makers? Or did they help people mount??

All the "pelloneras" I see are leather padded cushioning for the saddle.

So, if this was an occupation you could say "pellonera" (saddle cushion) maker to be specific. These days we'd probably just say "saddle maker" or "tack maker" but in bygone days sometimes craftspeople carried out specific work or trades.

agree Tomasso : De acuerdo, en las referencia, pelloneros y pelloneras, hacian monturas, y pellones, avece de crin de caballo y a veces con la lana tadavia pegada, solian quitar las motas de la lane. En Liberia tuvimos un pellon de crin de caballo.

With minimal leather, the rigged saddle requires less cleaning time to keep in good condition. Other saddles which have a work tree completely covered with leather are called work-show saddles.

Work saddles that do not have skirts use a leather pad (pellonera) as a seat cushion. The pellonera can also be used for added comfort over saddles with skirts. To give saddles a better appearance, the pommel and cantle are sometimes covered with fine leather.

The pelloneras that I have seen on links do not have sheepskin, but rather are made exclusively with leather. Sheepskin pads used under saddles are often used and referred to as numnahs (British English).
