"In tas-de-charge" would be the best way of handling "en tas-de-charge", in my view:
"The cross section drawing by Vincent of the nave shows five courses in tas-de-charge"

Alternatively, I suppose you could say "vaults with tas-de-charge with a large number of courses combined", but I think my first suggestion would be better.
