It's in this excerpt from the Shahname.
تهمتـــــــن چنیـــــن پاســــــخ آورد بــاز
که هســــتم زکاوس کی بی نیـــــــاز.
مـــــــرا تخت زین بـــاشد و تاج تــرگ
قبا جـــوشن و دل نهــــاده به مـرگ
I realize it's made up of two words, تهم and تن – since تن means “body”, is it referring to Rostam’s physical appearance? I gather that تهم can mean both “broad and tall” and “valiant”, so is it excluding the latter meaning by adding تن?

It refers to Rostam's physical appearance.
As you said,
تهم means "huge, tall and broad" and "تن" means "body".
تن is used frequently in modern Persian but تهم is not used any more, at least in most of the dialects.

The term تهم means a great vailant, a person unique in courage and greatness. Also the term تهمتن refers to someone who has a very strong body and in persian it is synonymous with تناور. The term تهمتن is the title of Rostam and emphasizes both the courage and more than that the strong body of him.

تهمتن: robust/physically strong/ تهم: courageous/ valiant
The term تهم indicates courage but when added to تن it shows that the person being refered to is physically strong. So it can be stated that by using تهمتن ferdowsi underlines the STRONG BODY of Rostam NOT MERELY the LARGENESS of it.
