How would you translate α化物 (the symbol before 化物 is an alpha letter, don't know if it will show correctly in the forums) in the context of food processing?

Gelatinous substance
I found that α化 is 糊化 http://kotobank.jp/word/α化, which is gelatinization, so my guess would be that α化物 can be translated as something like "gelatin(ous) substance" or, maybe, "gelatinous form (of the product)".

The sentence is about using either starch (澱粉) or gelatinized (α化物) versions of the substances (小麦粉、米粉).
