Italian term
a seconda della disponibilità del mare
Italian to English
Marketing
Cooking / Culinary
Italian menu
The whole sentence is:
This wording appears on a restaurant menu.
That means that if it is possible to catch fish in the sea, some seafood will be fresh otherwise it will be frozen. The possibility depends on weather or seasonal conditions (no fishing in stormy weather, some fish is only available at certain times of the year) and on fishing restrictions (e.g. it is forbidden to fish in August in my area).

: sounds terribly flat and bureaucratic

Just my opinion, but as a footnote in a menu I don't think it needs to be anything other than simple. It's not a description of a dish.

: though to emphasise the fresh aspect, might be better 'some of these products may be frozen if not available fresh'

: adding this footnote in menus *is* a bureaucratic requirement

: It sounds like it might be a joke in Italian. You could also say "depending on how the sea is feeling".

I don't know what your country is, but we're talking about Italy here where the only thing that matters is the freshness and quality of the fish. Not health and safety regulations.

: Tom, see discussion. It's a legal requirement on menus in Italy so it should be flat and bureaucratic, not moody.

I'd put it this way to be consistent with the rest of the menu
Discussion
This is an obligatory declaration for restaurants in Italy, in many other countries too methinks.
In Italy it is considered fraud under the penal code not to declare some fish may be frozen as it all is during the August fermo pesca.
