I've cut and pasted this from my answer to Maria's other question about "forma matrice", since the two are closely linked.
I think they're talking about three-dimensional art in which a piece or pieces are cut out of a geometric shape and rearranged, as in the first picture here:

I suggested "matrix" for "matrice", the original shape, and I'm now suggesting "cutout" for the bits removed from it to form a composition. Again, I don't think it's necessary to say "form", but you could if you wanted to.
