Thanks Cheers for the ideas all. I also found "dressed fish" as a more concise alternative. Any thoughts on that idea? E.g. http://seafood.nmfs.noaa.gov/WholeorDressedFish.PDF

Küchenmäßig vorbereitete Fleischteilstücke zeigten geringere Salmonella-Belastungen als im Vorjahr mit 2,34 % (2002: 2,41 %) bei nahezu verdoppelten Untersuchungszahlen. In zerkleinertem Rohfleisch (nicht entspr. HflV) wurde ein Anstieg der Salmonellarate festgestellt: 3,45 % (2002: 1,54 %).

In meat parts prepared for processing in the kitchen, the Salmonella contamination was lower than in the previous year (2.34%, 2002: 2.41 %) while the number of examinations had almost doubled. In comminuted raw meat (not in conformity with the Minced Meat Regulations), an increase of the Salmonella rate was found (3.45 %; 2002: 1.54 %).
