Lobster tier/pyramid

That's all I've ever seen in restaurants - a "build-up" of lobster and other seafood arranged on a spiral pyramid.

lobster arrangement

Could it be where the flesh is removed from the shell, seasoned, and then put back to make it look original, sort of like 'twice-baked potato' where the insides is removed from a baked potato, seasoned with bacon and cheese and put back in the skin to preserve its original shape. GUESSING

lobster menu

It is the first thing that came to mind. I admit the extravagent lobster dish sounds tasty.

Perhaps "luxurious lobster..." :)
