From a job testimonial by what I think is an old people's home. Your mission, should you choose to accept it, is to find me a translation for the utterly obscure word "Econnement". I really need something urgently. Will take guesses provided they're reasonable and some sort of explanation for them is provided. TIA for your hopefully fast help. Actually, I could really do with some assistance in untangling the whole sentence!

Explanation:
The impression I get from the description is that it's some sort of store/fridge for food, since he has just put the cheeses out and then has to "clear out" the ecoment - but I'm only guessing really!

Um halbneun stehe ich auf, trinke einen Kaffe, putze mir die Beisser und laufe ins Hotel. Um neun Uhr steh ich dann umgezogen in der Küche, einen Blick auf den Mis-en-place Zettel verrät mir, was ich zu tun habe. Ein paar Anweisungen von Micha und es geht los. Heute habe ich Candite geschnitten und eine passende Creme-Fresh zum dippen dazu gezaubert. Dann ging ich essen. Nach dem Essen rauche ich noch meine zwei Zigaretten wusch mir die Hände und ging ins Del Ponte zu Antonja. Ich schnitt Basiliken in feine Streifen und machte ein paar Pizzas. Um 14.15 durfte ich in meine Zimmerstunde.Um 17.00 Uhr stand ich dann wieder auf der Matte. Ich machte 2 Walliserteller mit Trockenfleisch, Speck, Rohschinken, Essiggurken und Silberzwiebenl. Dann ging ich schon wieder Essen, rauchte meine 2 Zigaretten und wusch mir erneut die Hände.Claudia sagte zu mir: "Schick den Wagen nach oben und baue das Käsebuffet auf." Was ich dann auch tat. Zum Glück war der Chef auch oben, denn ich kann noch nicht alle Käsesorten genau unterscheiden.Nicht lange später tauchten die ganzen Gäste auf und ich durfte die Hartkäse und Blauschimmelkäse präsentieren.Um 10.30 Uhr ging ich runter in die Hauptküche und putzte das Fleischkühlhaus, räumte das Econement auf, half die Speisen zu versäumen und durfte dann schliesslich um 11.25 Uhr Heim. So, das war ein Tag im Ferienart!"
