¿Quiere decir que el hecho de ser el autor franciscano (y por tanto católico) no le impide meterse también con los cristianos de las otras confesiones?, ¿o "pick on" significa aquí otra cosa?

When deciding between easy and pro, err on the side of pro. Most questions will be pro.

"(¡no puedo meterme solo con los católicos!)" / "(¡no me puedo meter solo con los católicos!)" serían traducciones que yo vería válidas para español de España, si bien la primera suena algo más natural.

Explicación más compleja del contexto de la frase:
- El autor, franciscano (orden católica), está dando su opinión (no demasiado favorable) sobre diferentes tipos de cristianos.
- En la última frase, habla de los cristianos renacidos, a los que critica con especial dureza.
- Tras esta frase, seguramente tratando de suavizar su tono de crítica, viene la frase entre paréntesis. Esta frase contiene una expresión, "pick on", que tiene una traducción perfecta en español: "Meterse con". Analizándola más profunfamente, podemos ver cómo el autor dice, textualmente (tanto en inglés como en español), que "no puede meterse solo con los católicos". Está claro que el autor ha comenzando criticando a los católicos para extender sus críticas más allá del catolicismo. La frase entre paréntesis, con la expresión "pick on"/"meterme con", tiene una utilidad muy precisa en el texto, rebajando su seriedad notablemente. Si se cambia esta expresión por otra, se cambia el tono del texto.

Pequeña corrección: Donde dije "tras esta frase", me refería a "dentro de la misma frase". La pequeña broma del autor hace referencia directa a los cristianos renacidos, y anticipa una posible reacción de rechazo del lector ante una crítica a otro grupo diferente en tan poco espacio de tiempo.
