Hello!

There are more than one Japanese word that means "Japanese," depends on the context.

日本語 - Nihongo - Japanese language
日本の食べ物 - Nihon no tabemono - Japanese food (Literally: Japan's food)
日本人 - Japanese person (Person of Japan)

の(no) is a particle for someone who owns something (ex. George's House would be ジョージの家[Jooji no ie]). It can be for inanimate objects like I've mentioned above for Japanese food.
