Beetje een gok. Het Gastronomisch Woordenboek F-N [Dumoulin/Culinaire Boekerij] verwijst bij 'coffre-carapace' naar 'carcasse'. Voor dat laatste geven zij: karkas, romp, geraamte; soup à la carcasse de carnard (ou, d'oie) met beenderen van eend gans op smaak gebrachte groentebouillon. Van Dale F-N geeft voor 'coffre' ondermeer: borst(kas). Misschien heb je hier wat aan. Succes!

Zoals writeaway terecht opmerkt: 'breast' in English. Was met al dat Frans even uit het oog verloren dat je de Engelse term zocht, niet de Nederlandse ;-)

agree  writeaway: breast in English. certainly nothing to do with the carcass unless it's for soup. but why take so much care in browning a carcass and how can you have a skin (or house) side on a carcass? ;-)
