Hi Jason,
It would seem tronco here refers to variety or family. here is a string of messages where the word is used, although mostly referring to cattle, but it should give you an idea of what it means.
I have also seen other references which differentiate "tronco ibérico" and "ibérico puro" - therefore there would seem to be some leeway for pork to be classified "ibérico" without being 100% pure.
It could need a bit more research into the differences, but this is as far as I can get right now.
Maybe using "varieties" in plural would give a hint of there not being a single "ibérico"...
