That's actually different to your question header - it doesn't say "die den Zertifikaten untergeschalteten Noten".
Could "untergeschaltet" mean subsidiary or lower-ranking? Or underlying, maybe?

I quote the entire text: "Anbei liegend finden Sie die Kopie Ihres Schreibens vom [Datum]. Ich würde ein subtanzielles Pfandrecht gegen die hinterlegten Zertifikate inklusive aller untergeschalteten Noten akzeptieren. Es wird eine Frist von 5 Tagen gewährt. Hochachtungsvoll..."
The Schreiben referenced says that the person who writes the above owes the addressee some money. That's really all there is.

I don't know what you mean by "makes a claim against the certificates". And people will tend not to answer if you decline to provide the context, which is what the letter says, in German.

Context - sadly, there isn't It's a letter with a "Forderung" (claim). Somebody hasn't paid something. The letter makes a claim against the certificates "und aller den Zertifikaten untergeschalteten Noten." And then there's a deadline. And that's it, sorry.

I tend to believe that we're talking about subordinate(d) notes here ("untergeschaltet" could be the same as "nachrangig"). That said, I am by no means sure because there is - still - so little context. For instance, we know (almost) nothing about the structure of the underlying transaction and the parties involved in it.

I think subordinated is more plausible than underlying, but I'm just not sure. So I'm afraid I can't really select this as the best answer.
