De forma simplificada, lias são nada mais do que a matéria sólida deixada em um tanque ou barril, após a fermentação, composta por leveduras mortas e outras substâncias da própria uva. É uma técnica geralmente usada em vinhos brancos e pode ser feita em tanques de aço inoxidável ou em barris.
