This choice simply allows us to establish, for babies, what their preference is.

The babies have the choice between two snacks, what is the sense of establish here? Could it be "revealed"?

In that case, "determine" / "work out" ...would be my choice (in that order), depending on the register...

I forgot to mention that this phase is prior to a real experiment they are going to do.

work out/discern/identify

Here "establish" is used in the sense of "work out" - emphatically neither "influence" nor "do", as in the previous answers.

It simply means that we can work out/discern/identify what babies' preference is.

disagree Tony M : 'to found' is certainly one meaning of 'establish' — but doesn't fit here; you seem to be confusing it with the verb 'to find', which would be OK, but not like this in the past tense.
