This is in a maintenance sheet for a universal joint.

Repérer le cardan défectueux.
Remplacer le joint de cardan et la manchette de cardan:
Desserrer les serre-manchettes du joint de cardan.
Chasser la goupille côté partie menée du sectionnement de ventilation puis la rebuter.
Chasser la goupille de l'entre-cardan puis la rebuter.
Extraire le joint de cardan équipé de sa manchette de cardan puis les rebuter.
Graisser un joint de cardan neuf.
Remplir de graisse une manchette de cardan neuve.
Mettre en place un joint de cardan neuf dans une manchette de cardan neuve.

I can't really even figure out what manchette is here?
Any ideas?

gaiter / boot retainer

Well, from what they're describing, this 'manchette' is obviously the rubber 'gaiter' (or more familiarly 'boot') around the UJ — moe commonly called a 'soufflet de cardan', I believe, in FR.
As for the 'serre-' aspect, they are usually held on by some kind of thing, either a bit likte a cable tie, or sometimes by something metallic, more like a hose clip. In the absence of knowing exactly which type is fitted, the non-committal 'retainer' is probably your safest bet!
