Here in North America (but also in the UK) "gastronomers" is known but not too usual. "Caterers" is too specific.
I and my my fellow-linguists in my circle recommend "restaurant managers" or "restaurant owners", both of which are absolutely common.
If you don't want to be too precise "restaurant owners and managers" would be fine as well.

Judging from the added context, I would suggest "owners of hotels, restaurants and event locations", if you're sure that this is what is implied.
