I am assuming it refers to stability of pharmaceuticals/chemicals (or other similarly volatile products.
I'd be reluctant to use this in plural (stabilities), just as I was loath to use "performances" to describe the performance of different animals subjected to different feeding regimes in a recent translation job.

The plural noun "estabilidades" is the subject of the query. Spanish writers often pluralise words that are normally left in singular in English, e.g. "performance".
