Je viens de vérifier... Il s'agit bien d'une recette US. Les pommes de terre apparaissent uniquement dans la liste des ingrédients et pas dans la description de la recette.

Most people use starchy Russets for mashed potatoes. With their high starch and low water content, they’re good for baking, for making French fries, and for mashing. Here’s my secret though—even better than Russets for mashing are Yukon Golds. They’re a little more expensive than Russets, but worth it. They’re naturally creamy when mashed, never mealy, and have a slightly buttery flavor all on their own. Yukon golds make the most perfectly creamy, buttery mashed potatoes.

But when you localize a menu or a recipe you do use local terms and Bintje is the most used potato type in France for fries & mushed potatoes.

@ Asker It would be very helpful to know the origin of this recipe: North America or Europe? If that isn't totally clear, then perhaps you could give us some of the other ingredients and quantitites, so we can decide for ourselves.

Une façon de les préparer Bien que figurant dans la liste des ingrédients, je pense que "Butter Potatoes" fait référence à ce qui accompagne les fruits de mer. Elles sont servies avec le plat principal. Il s'agit de pommes de terre enveloppées dans du papier alu, avec du beurre et cuites au four pendant un certain temps. If this appears simply as "butter potatoes" in a list of ingredients for a recipe, I would think it refers to a type of potato, not to potatoes with/in butter. For example, sometimes Yukon Gold potatoes are called "butter potatoes" in the US.

Ces pommes de terre sont utilisées pour la confection de purées ou de frites, et pour la fabrication des produits transformés (chips, croquettes, frites surgelées, etc.).
ça marche bien avec les poissons et les fruits de mer !

I think recipes & menues should be localized not just translated!
Butter potatoes are the gold fleshed potatoes used most to make fries and mashed potatoes. The most known type of potatoes used for that in France & Belgium is the Bintje.
People in France when they are to make a recipe, probably they will not find Yakon or Russets but they will find the Bintje !

butter potatoes are the one with gold chair like the Yokon or Russets used most for mushed potatoes & fries and the most known type of potatoes used in France & Belgium for these uses is the Bintje, I think translation is not about reporting word by word
disagree Tony M : I have to agree with W/A here: there is no clue it might be Bintje, and they hardly count as 'yellow fleshed'. / if you're looking for a local variety, then Charlotte would be more appropriate (and also available in other countries, unlike Bintje)

A sign at my local grocery store identified the bag as "Yukon Gold/butter" potatoes...All the gold fleshed potatoes are called butter potatoes because they are all buttery in texture with a butter color...
