frigo des encours

French to English Tech/Engineering Engineering (general) air cleanliness
This comes from a table showing the results of a test of microbiological air cleanliness in the premises of a professional caterer who supplies frozen desserts which are distributed in restaurants, catering and restaurant chains.

Various sampling points are listed, such as 'atelier cru', 'atelier mélange', 'atelier conditionnement', 'frigo des encours', etc.

Presumably 'frigo des encours' is where they put desserts which are in the process of being made. Is there a specific term for this in English?

In accounting, encours is semifinished products. That would work in this context too.

in process I would say that you have already answered the question: it is the refrigerator for the desserts (products, whatever) in process. Termium supports this.

The key term is "line cooler". The "prep" qualifier is optional and depends on whether you're preferring kitchen (prep line) or factory (production line) terminology.
