I realise this is literally infection pressure however, I think it is to do with the rate/level of contagion/infection, i.e. how easily a disease can be passed on from one cow to another making it difficult to irradicate.
I am resisting using the word 'contagion' as the term 'besmettingsdruk' is used earlier in the text and they cite poor ventilation as one of the reasons why farmers can't reduce besmettingsdruk in the short term. Therefore presumably it can also apply to air-borne diseases.

The literal is not to far off from the reality.
"infection pressure" is an index that correlates how likely one is to get infected with contagious disease based on the ratio of infected persons to non. The same terminology is used with people and STDs. Cities / towns with high infection pressure mean one must take higher precaution, for example, when engaging in casual sex, because it means there is a higher density of infected persons. Hence, the more likely you are susceptible to contracting a certain disease.
The same term is applied when referring to horizontal transfer of contagions between animals in (relatively) confined areas.
