Tony M May 19, 2011:
@ Lara Right, I see what you mean now; however, I don't think we need to assume that, since 'bouton d'asperge' does have a specific meaning relating to the natural ingredient itself, so no real need to look any further...
Lara Barnett May 19, 2011:
@ Tony- prepared food Sorry if I failed to read all explanation. My point is that "bouton" could be referring to the way the asparagus has been prepared rather than which part it has come from on the vegetable.
Tony M May 19, 2011:
@ LB Asker clearly states it is from a restaurant menu, and it obviously does involve a prepared dish. So I'm not really sure what you mean by your question?
Lara Barnett May 19, 2011:
Context Is this from a menu of prepared stuff?
Evans (X) May 19, 2011:
Right, that's it, I'm going out right now to buy some. They're in season here and I have people coming for supper tonight!
writeaway May 19, 2011:
Claire Cox May 19, 2011:
Yes After waiting the prescribed three years, I've finally been able tp pick my asparagus for the first time this year and the emerging tips do indeed look like little rosebuds when you first see them peeping through the soil. They then grow incredible quickly so if you forget to look for a few days they've turned into ferns before you know it!
Philippa Smith May 19, 2011:
I'm thinking boutons = buds => young asparagus tips?
Colin Rowe May 19, 2011:
I would imagine so And the whole starter sounds tasty!

asparagus buds

As suggested in the Discussion entries by writeaway, LaraBarnett, and Claire Cox and Philippa... the tips of very young asparagus shoots

4 KudoZ points awarded for this answer. Comment: "Think I'll go for this, as it sounds a bit unusual for a menu (otherwise, if they're tips why not just say pointes d'asperges?). Tender shoots might be another option, but shoots and spears do tend to suggest the whole stalk to me (cf similar Google images for both), whereas I think they mean just the very tip of the tip, so to speak - as seems to be shown in writeaway's link. Thanks!"

Asparagus tips

yes..
Peer comment(s):

neutral Tony M : I'm not so sure! This is a bit more specific, see discussion entry by W/A / No, 'shoots' means young, just starting, whereas in the specific context of asparagus, 'tips' has another meaning, i.e. just the top extremities of grown stems.

maybe you're right. I suppose a photo of the dish would clear up any doubts-but doesn't tips or buds translate more precisely than shoots? Don't shoots sound 'longer' than tips, if you get my drift... I see, in that case only the chef knows which it is.
agree B D Finch : See my ref posting.

And yes, it does sound delicious, doesn't it? I particularly like the idea of the contrasting textures and flavour combination.
