Paupiette of 'linguado' with shrimp (prawn) and tomato gratin
given the number of varieties it could be (in Sheila Gomes's link) I'm reluctant to state a fish name, but in a menu I think "paupiette of ~" sounds better; "prawn" for the UK, shrimp for the US, but it has to be singular otherwise it sounds like only the tomato is gratinéed.
