I have a difficulty at figuring out how to translate this as I am not very sure if I understood it correctly.

The context is below:

Was kommt Ihnen an einem ganz normalen Werkstatt-Tag nicht alles unter, das abgedichtet werden muss?

A rough translation of the sentence above would be very much appreciated.

In the course of an average day in the workshop, you don't tend to come across much....

..that doesn't need sealing, do you ?
Sealing rather than jointing is more probable, if it refers to gaskets and oil/fuel pumps seals, etc.

Without wishing to appear conceited, I feel this answer matches the conversational and idiomatic style of the original better, and a double negative is included for the effect of litotes, or ironic hyperbole if you like.
