gastronomic combination or pairing of 5 wines and ...
platos can be courses or dishes ...in this case I'd lean towards courses since it seems to be a 5 course meal

maridada in Collins dictionary as "gastronomic combination"

I have also seen "matching" for pairing on menus but think best sentence probably "a 5 course gastronomic menu of wines paired with food". We do not have evidence, do we? that it is a gourmet menu?

A very common word when talking about wines. It refers to the good combination of wines and food. My suggestion for your sentence would be something like 'a meal consisting of 5 courses married to 5 wines'.
