rettificata

Italian to English Other Cooking / Culinary recipe for poached fillet of veal
The reference is to champagne sauce: "salsa allo champagne rettificata con la panna montata". "Rectified"/"corrected" are obviously not right, and food glossaries and dictionaries haven't helped so far. "Thickened" or "enriched" would make sense, but would they be right? Thank you for any help given.

I would simply say "enriched by adding the whipped cream".

Why don't you eliminate the problem altogether with something like "champagne-whipped cream sauce" or "champagne & whipped cream sauce"

I think it's just this - like in French, where rectifier can mean adjusting the flavour/seasoning - sorry, no time to get refs. at the moment.

Cream is not one of the ingredients in the 'basic' recipe for champagne sauce. In your case it is added to the sauce to thicken it and enhance its flavour.
'Rettificata' is not the best choice in Italian, but that's what it means here.
