On a menu of an upmarket hotel resaurant.
Morue being salted cod, this seems like not-so-salty salted cod, but how to say it?
And it's a carpaccio.
Sorry about all the questions in one go before, it was a bit abusive - desperation drove me to it! I'm just sticking to this one now, as I'm running out of time.

: As you say, if not salted it is cabillaud, not morue. Though I recently bought dos de cabillaud which turned out to be salted (but not dried).

: In FRance I've also seen "morue fraîche" which is in fact cabillaud, and not salted at all

does not mean it is fresh, as would be cabillaud indeed, but can be dried or smoked even or of course frozen...
I think cod is fine but as doubt would say unsalted rather than fresh

Following your comment, I have made some enquiries with my friends in the South of France and am told that it means "DESALTED salt cod". If you Google this, you will find interesting and I would say conclusive results. It makes a lot of sense anyway, especially for a carpaccio.
