: Yes, this is the most common term used in this industry. However, it varies a lot with the establishment. It can be rest. mger or floor mger as well.

Could well be the Maître d', but it's a little hard to tell without seeing the exact hierarchy / structure used in this particular establishment. But 'Directeur' sounds a bit higher up than that to me, I suspect he might be another rung higher up the ladder...
